Pretty Muddy Chicago, Nutrition Snob Clothing Winner & 100 Burpee Day!

On Sunday night after we got home from our Super Bowl party I got an exciting email from the folks at Pretty Muddy telling me that I had been selected as part of their Pretty Muddy Chicago bloggers team!  You may remember that I blogged about there event a few weeks ago here.

WIAW and Tuesday craziness!

Yesterday, was seriously such a crazy busy day!  Down time really didn’t exist.  I’m lucky that I was able to pull this post out!  Thanks to Jenn over at Peas and Crayons for hosting another week of WIAW!

I had an awesome workout yesterday!  I ran 3.1 miles and pulled out an 8:09 mile.  After that I tried out this new app that I downloaded called RipDeck.  Basically, the app takes a deck of 52 cards and assigns an exercise to various numbers and suits.  I did the intermediate level and subbed tricep dips for pull-ups since I don’t currently have a pull up bar!  It was a long and hard workout that had me doing sit ups, dips, squats and push ups.  In the end I did all 52 “cards” and pulled out 100 of each.  They have a harder and easier level and the app is only .99.  It’s an easy at home workout that you can modify and adjust to your preference!  It’s pretty cool if you are looking for something different to add to your at home workout routine!

So, moving right on to breakfast which was rushed because I wanted to get out of the house by 7:15 to get an oil change.  I whipped up some of the Earnest cereal and drizzled a little coconut milk on top.  Also had my morning vitamins.

Sara and I hit up Starbucks after we left the Honda dealership because I didn’t have time for coffee this morning. I had my soy misto and was content, which was later followed by an amazing pink lady apple.  Whole foods had them one sale last week and they are so amazing and crunchy!

After several other stops and story time at the library we came home for lunch.  I’ve been enjoying this veggie curry that I made over the weekend in the crock pot.

We continued our crazed afternoon with gymnastics and my snack was on the go!  I packed a handful of raw almonds and dried Turkish apricots.  It held me over till dinner!

I did some kitchen experimenting for dinner and ended up making a delicious almond crusted chicken. I roasted up some broccoli and added brown rice.  I should add that I ate almost an entire head of broccoli, which resulted in a bit of heartburn.  I’ll share the recipe in the coming days.

After the heartburn subsided I had a few spoonfuls of this yummy treat while I washed the premier of Smash!  Yeah, so excited that it’s back!!  Love that show!

Peanut Butter Banana Bites + Pro Compression Winner!

Looking for a pre or post workout breakfast?  I’ve been making these amazing little banana bites in the morning and they keep me full for hours!

Ingredients 

1 banana sliced

1/4 cup of plain greek yogurt

2tbs of PB2 or 1tbs of natural peanut butter

1tbs of chia seeds (optional)

Directions

Mix PB2 (peanut butter) with 1/4 cup of greek yogurt

Spread mixture onto banana slices

Pop into the freezer for 15 minutes (this step is optional, but I like the taste of frozen/ semi- frozen bananas)

Enjoy, eat, devour!  This can also make an excellent mid-day snack!

Move it Monday: HIIT Treadmill Workout and much much more!

Did you watch the Superbowl?  Here’s my issue with the Superbowl… what’s up with the late kick- off time?  For those of us with little ones, watching the entire game at a Superbowl party just isn’t an option!  I don’t understand it.  During the entire duration of the football season, games start at noon or 3:15.  Occasionally, there is Sunday or Monday night game but in our house, Sunday has always been football Sunday.  Can anyone explain why the game starts so late?

We finally got some snow here this weekend!  It’s February and there is a nice layer of snow on the ground.  Sara finally had the chance to play in it for a bit!  My experience at CrossFit on Saturday was amazing.  It was incredibly challenging and I found that I was really pushed.  I still have to decide if I am going to make the commitment to do this though.  It’s pricey and it would mean that 2-3 days a week I’m there at 5:30am in the morning.  I don’t mind the time of day.  I already workout in my basement at 5:00am but this means leaving the house and then coming back home.  So, we will see.  Do any of you guys do CrossFit?  Do you do it at home or at a studio?  How has it helped you?

So, yesterday was my Bikram Yoga day.  I knew it would be a challenge as my legs were already sore, but it was a great 90 minute session.  By noon I had a hard time sitting down and standing up.  Yikes, big time soreness, but I love that feeling every once in awhile.

So, last month I participated in Nicole’s New Year New Gear Program . Basically we had a budget of $15 and got paired up with someone to send them some new workout gear.  Cecilia over at MommiesRun sent me this awesome Lululemon yoga strap!  Lately, I have been using my bag the Juil sent me with my awesome shoes, but I can’t wait to try the strap out when I am taking my yoga mat out of the house. Thanks so much to Nicole for putting this program together and to Cecilia for the awesome gear!

IMG_3181 IMG_3182Today, I’m taking the day off from working out after my back to back killer days, but that doesn’t mean you should take the day off! This is an awesome HIIT (High Intensity Interval Training) treadmill workout that I did last Thursday.  It takes 30 minutes and I promise, it will make you sweat!!!

Healthy sELF Challenge and Juil Shoes Review

I’m so happy it’s Saturday, and this morning I am trying out CrossFit for the first time!  I’ll give you guys the low down next week.  I can’t wait!

WIAW & Chia Peanut Butter Chocolate Chip Cookies

My day started at 5:30 with this awesome speedy run!  It left me feeling high all morning!  After the run, I did my Tank Top Tabata!  My arms were burning!

I prepped breakfast the night before and dug right into my overnight oats.  Of course, I topped with my the homemade chia peanut butter because this stuff is seriously addicting!  I also enjoyed my coffee, which consisted of almond milk and coffee.

After breakfast we decided to bake some cookies.  Part of the reason was that I need to finish up this peanut butter without actually sitting with the jar by myself and consuming the entire thing!  We made these Chia Peanut Butter Cookies, but I made some modifications.

Ingredients:

  • 1 1/2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 cup  spelt flour all purpose or gluten-free flour
  • 1 1/2 tbsp chia seeds
  • 1/4 cup coconut oil butter, room temperature
  • 1/2 cup brown sugar
  • 1/4 cup of brown sugar
  • 1/4 cup of coconut sugar
  • 3/4 cup peanut butter ( I use my homemade peanut butter)
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup dark or semisweet chocolate chunks or chip

Breakfast really kept me full and around 11, after Sara and I had her story hour at the library I had an apple.

I had a lunch work meeting which I brought Sara too, so I didn’t really get to photograph lunch.  Actually, I didn’t really eat much at the meeting.  They had deli trays, which isn’t really my thing.  There were some veggies and salads which I munched on but it didn’t do the trick.  When we got home around 2:00 I chowed on this leftover bowl of Kabocha Squash tots from the night before!  AMAZING!

IMG_3145Before we ran off to gymnastics class I prepped this for dinner!  I found it on Pinterest last week!

Hummus chicken was a HUGE hit!  The best part was that the veggies were part of the recipe and all done in one dish!  I added some quinoa on the side.  Awesome pinned dinner that I will for sure be making again!

So good and the best part is that you really can’t feel so guilty after eating them!  The recipe makeover was a huge success.

Homemade Peanut Butter

A few weeks ago, Sara was eating peanut butter from Trader Joes and asked how it was made.  I explained how all you really needed were some peanuts and a food processor!  When she asked if we could make some, I told her of course!  I mean, who am I to say no when she asks for homemade peanut butter?!?!  I only buy natural peanut butter, usually from Trader Joes or Whole Foods.  Have you ever checked out the nasty ingredients in Jiff or Skippy?  I don’t even know how they get away calling that stuff peanut butter!  Gross!

So, all you need for this entire process is 5 minutes and a food processor.  Seriously, I may never go back to store bought again!!  Oh, and you probably want a spoon too!

16 oz bag of peanuts-  I used roasted and unsalted but you could really try anything

1/4 cup of chia seeds- Flax seeds would be fine or you can omit

1T of sea salt- Optional depending on what kind of nut you are using

1T of honey- Optional- I’ll talk about variations at the end

Directions

Add peanuts to the canister of a food processor.  Process on high power until creamy and smooth, about 5 minutes, stopping to scrape down the sides of the canister if necessary.

I added in sea salt when it was it was in its paste like form.

I added in my 1/4 cup of chia seeds and the honey when there was about 1 minute left of processing.

Notes

The peanuts will go through stages of: crushed, crushed into a fine powder, a paste, a thicker paste, a big “dough ball,”, and then the ball will break down into a thinner peanut butter. At the point the peanut butter is thin, continue processing for about 1 more minute, making sure the peanut butter is as smooth as desired.

I store my peanut butter in an airtight container or jar in the refrigerator, where it keeps for many weeks. I prefer thicker peanut butter and the refrigerator helps it to stay thicker. You can store the peanut butter at room temperature where it will keep for at least a week. If it makes it that long!

Substitutions and Flavoring Suggestions

Substitute honey roasted, salted, or unsalted peanuts, mixed nuts, seasoned, or spicy nuts.

Salt, to taste.

Seasonings or flavorings to try and add in the final moments of processing and process until incorporated: cinnamon, pumpkin pie spice, chocolate chips, nutmeg or agave; have fun with it.

Next time, I’m going to try an eggless cookie dough recipe and try adding some chunks of cookie dough in at the end for an ultimate sweet treat!

Move it Monday: Tank Top Tabata

Hope you all had wonderful weekends!!  The weather here has been so crazy in Chicago.  For starters, it’s the end of January and after 355 days without “major snow” we broke a record  here with a mind blowing 1.1 inches of the white stuff on Friday!  I’m not complaining, but it’s just weird!!  They are saying the high for tomorrow is going to be 60˚.  Last week at this time, the high was 7˚.  Yesterday we had some  freezing rain followed by a lightning storm.

So my blog got a bit of face lift this weekend.  Special thanks to Kasey over at Kasey Surfs for the new look!  What do you guys think?

We didn’t have  much going on this weekend which was just fine with me.  I got in a great and speedy treadmill run on Saturday morning before my shopping partner and I hit up Trader Joes and  Starbucks for a little date.

Sunday, I headed back to Bikram yoga after a few week hiatus.  It felt amazing to be back in the heat!  After Bikram, Sara and I made this amazing Chia Peanut Butter!  I can’t stop eating it!!  Recipe coming tomorrow!

I’ve been starting to think about some spring races and half marathons!  Looking to do some new ones this year.  1/2 marathons are my absolute favorite distance!  For starters as much as I love marathons, training for a 1/2 takes a whole lot less time and the satisfaction is just as great.   Do you have a favorite distance?  Got any races in the hopper for 2013?

So, keeping along the lines of summer I wanted to share with you this great upper body Tabata workout I created.  It’s a great way to get those arms in shape for all those fun strappy dresses and tanks tops for the summer!
